Fried Apple Rings

These apple rings are super yummy, and the fact that they are filled with red and green deliciousness means that they double as a holiday-ready treat. So if you're tired of butter cookies and candy canes, then heat up your deep fryer, grab yourself a bag of Drum Rock Buttermilk Pancake & Waffle Mix, and let's get cooking!!
Fried Apple Rings
Ingredients:
4 small apples, cored
2 cups Drum Rock Buttermilk Pancake & Waffle Mix
1-1/2 to 2 cups water
1 teaspoon cinnamon, divided
4 oz. cream cheese
2 tablespoons red and/or green colored sugar
Oil for frying
Fryolator
Directions:
1. Fill the fryolator with oil and turn to 350° F.
2. In a large bowl, mix together the pancake mix and slowly add in water, stirring to combine. Batter should be slightly lumpy; add more or less water until batter reaches desired consistency.
3. Add the 4 oz. cream cheese, 2 tablespoons colored sugar, and 1/2 teaspoon of cinnamon to a microwavable bowl and heat for approximately 35 seconds or until soft. Combine until smooth. (If you want to use both the red and green sugar to fill the apple cores, then simply divide the cream cheese into two separate bowls, and add 1 tablespoon of colored sugar and 1/4 teaspoon of cinnamon to each bowl.)
4. Use the mixture to fill the core of the apples.
5. Once oil is up to temp, skewer the apples across (not through) the core, and use as a handle to coat the apples in the pancake batter; once coated, gently place (DO NOT DROP!!) the apples in the fryer. Fry until batter is cooked to a light golden brown, then carefully remove and allow to cool on a paper towel or plate.
6. Allow to cool for at least 10 minutes, then carefully slice the apples lengthwise so that the core of the apple forms a circle in the middle of the slice. (The longer you allow them to cool, the better set the cream cheese core will be, preventing it from melting out of the center.)
7. Serve as is, dusted with a bit of powdered sugar, or with your favorite dipping sauce.

We intended to make apple lollipops, but our apples were a little on the large side, so it was difficult to put them on sticks.
