Fritter & Clam Cake Mix

The “Original” RI Clam Cake

 

 

For Traditional Clam Cakes

  • For 1 pound of Drum Rock Fritter & Clam Cake Mix, add 1 cup minced clams with juice (a total of 8 oz.) and 1 to 1-¼ cups cold tap water.
  • Stir until smooth, making sure to not over mix. Let stand and proof for 5-10 minutes.
  • Use a No. 40 or 60 ice cream scoop to drop mixture in deep fryer. If using a No. 40 scoop, use level scoops, do not overfill.
  • Be gentle with the mix. Work off the edge of the bowl. Try not to over work and disturb the mix too much; this will help keep the mix light and fluffy.
  • Drop clam/fritter mix in deep fryer at 350 degrees, turning gently for 3-4 minutes until golden brown.
  • Drain on absorbent paper, serve while hot.


For Conch Fritters
  • Mix the following ingredients in a bowl.
    • 2 pounds Drum Rock Fritter & Clam Cake Mix
    • ½ Sweet Red Pepper diced
    • ½ Green Pepper diced
    • ½ Red Onion diced
    • 2 cups (16 oz) chopped/minced conch, or a combination of conch and sea clams, with juice
    • 2 teaspoons of Old Bay seasoning
    • 1 teaspoon dried crushed red pepper
    • 1 teaspoon dried crushed red pepper
  • Add 2 to 2 1/2 cups cold water (or a combination of water and conch/clam juice); gently fold in,making sure to not over mix. Let stand to proof for 5 -10 minutes.

Use clams that are fresh, frozen, or canned. Frozen clams must be completely thawed.
Try to use the mix within 3-4 hours for best results.
1 pound Drum Rock Clam Cake & Fritter Mix will make 3-4 dozen clam cakes.


 

Other Fritter Suggestions
 

  • Corn Fritters:  Add 1 can (6-8oz.) nibblet corn to 1 pound Drum Rock Fritter & Clam Cake Mix. Adjust liquid accordingly. Add seasoning and spices if desired.
  • Apple Fritters:  Add diced canned or fresh apples to Drum Rock Fritter & Clam Cake Mix. Adjust liquid accordingly. Add sugar and/or cinnamon if desired.
  • Banana Fritters:  Add diced fresh or dried bananas to Drum Rock Fritter & Clam Cake Mix. Adjust liquid accordingly. Add sugar if desired.
  • Fruit Preserve Fritters:  Add your favorite fruit preserve (raspberry, blueberry, strawberry, etc.) to Drum Rock Fritter & Clam Cake Mix.
  • Maple Syrup or Honey Fritters:  Use Drum Rock Fritter & Clam Cake Mix as is out of the package, add water. Dip fried fritters in maple syrup or honey, or drizzle on top.
  • Brown Sugar and Cinnamon Fritters:  Add brown sugar and cinnamon to Drum Rock Fritter & Clam Cake Mix.
  • Plain Fritters:  Make plain fritters with Drum Rock Fritter & Clam Cake Mix. Dust fried fritters with powdered sugar.
  • Vegetable Fritters:  Add finely diced vegetables, such as peppers, carrots, onions, or mushrooms to Drum Rock Fritter & Clam Cake Mix. Serve with your favorite condiment as a dipping sauce.
  • Smoke Salmon Fritters:  Add smoked salmon bits to Drum Rock Fritter & Clam Cake Mix.
  • Corn & Crab Fritters:  Add nibblet corn and crab meat to Drum Rock Fritter & Clam Cake Mix. Add spices for a signature blend.
  • Shrimp Caribbean Fritter:  Add very small cooked shrimp and spices to Drum Rock Fritter & Clam Cake Mix. Creole or Bay Seasoning spice works well.
  • Italian Vegetable Fritter:  Add diced red, and/or green bell peppers, onions, and/or mushrooms with garlic, basil and oregano to Drum Rock Fritter & Clam Cake. Serve with tomato marinara dipping sauce.
  • Indian Curry Fritters:  Add diced daikon radish, onion, and/or mushrooms, cumin, coriander, and cayenne to Drum Rock Fritter & Clam Cake Mix. Or use a prepared curry spice mix .
  • Lobster Fritters:  Add lobster bits or surimi (imitation crab meat) to Drum Rock Fritter & Clam Cake Mix. Add coconut liqueur and/or Pina Colada mix to the mixture. You can also add shredded coconut.
  • Spicy Fritters:  Add any of the following spices to Drum Rock Fritter & Clam Cake Mix: Bay Seasoning, Curry Seasoning, Cajun Seasoning, Italian Spices with Garlic Powder, Creole Seasoning, Lemon Pepper (salt free).
