Fis-Chic Wonder Batter & Breader

“No Wrong Way To Use”

 


For a Light Coating
  • Moisten seafood, chicken, or vegetables with water, then tumble-coat in dry Drum Rock Fis-Chic Wonder Batter Mix.
  • Deep fry at 350° F or pan fry until food reaches a golden brown.
 

For a Batter Coating – English Style Fish & Chip Batter
*The following is a general starting point. Adjust recipe according to desired end product.
  • Start with 1 part Fis-Chic Wonder Batter; slowly stir in 1 to 1-½ parts cold tap water until batter reaches desired consistency.
  • Dip seafood, chicken, or vegetables in wet batter and let excess batter run off before placing in fryer; deep fry at 350° F until golden brown.
  • Frying time will vary depending on the portion size of the ingredient. Fish or chicken will float when cooked; vegetables are done when coating is golden brown.
If desired:
- Use dry Fis-Chic to pre-dust seafood, chicken, or vegetables before coating in wet batter.
- Substitute water with beer for a beer batter mix.



Double-Dip or Multi-Dip Coating
*The following is a general starting point. Adjust recipe according to desired end product.
  • Start with 1 part Fis-Chic Wonder Batter; slowly stir in 2 parts cold tap water and mix until smooth.
  • Dip seafood, chicken, or vegetables in wet wash.
  • Let excess wet batter run off before tumbling in dry Fis-Chic.
  • Shake off excess dry mix; recoat with wet wash, and then again with dry mix.
  • Repeat wet/dry dredging as desired.
  • Deep fry at 350° until golden brown.
  • Frying time will vary depending on the portion size of the ingredient. Fish or chicken will float when cooked; vegetables are done when coating is golden brown.




Tips & Tricks
  • When testing to achieve desired coating, write down the proportions of dry mix and liquid used so you can duplicate your desired end product.
  • Use cold tap water, and always add dry mix to water to reduce lumping.
  • Use a wire whip to mix batter.
  • Use wire baskets to dip seafood, chicken, or vegetables in wet and/or dry mixes.
  • Use a good quality liquid or solid deep frying shortening and filter often. Change as needed.
  • Batter will keep throughout a day, but it will need periodic mixing.
